English muffin pizzas

I’ve been on a pizza kick lately.  It’s so versatile and easy, who can say no?

But this weekend I changed it up.  I’m daring like that.

I dug through the fridge and found this:

  • English muffins
  • Mozzarella cheese
  • Tomato
  • Pepperoni

And we also had this:

  • Tomato sauce
  • Basil and olive oil

The basil is from our garden.  We had a ton of it at the end of the summer so we shredded it, added some water and olive oil and froze it in ice cube trays.  Now I have delicious basil anytime I want it.  I defrosted a couple of ice cubes for my pizzas.

Start with some English muffins.  Slice them in half and toast them for a couple of minutes.

Then add some basil and olive oil.

Top with some tomato sauce and cheese.

Then throw in your toppings of choice.

I chose tomatoes and pepperoni on mine.

But Jon is boring and doesn’t like tomatoes so he just wanted pepperoni.

Boooooooring.

Stick them in the oven for 10-15 minutes.

Then serve.

Freezing those fresh herbs is a really good idea, I need to remember that one!

My sister was just talking the other day about how she is on a constant search for basil. I will have to tell her about your basil year round trick. She'll love it!
